Ingredients:
- 4 boneless skinless chicken breasts
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 lemons
- 2 tablespoons olive oil
- 1/2 cup chicken broth
Instructions:
- In a small bowl, combine the minced garlic, dried oregano, salt, and pepper.
- Rub each chicken breast evenly with the garlic and oregano mixture.
- Heat the olive oil in a skillet over medium-high heat. Once hot, add the chicken breasts. Sear for about 2-3 minutes on each side, until golden brown.
- While the chicken is searing, squeeze the juice from one lemon into the slow cooker.
- Slice the second lemon and set the slices aside.
- Once the chicken is seared, put it into the slow cooker.
- Pour the chicken broth around, but not directly on, the chicken. This will help keep it moist without washing away the rub.
- Arrange the sliced lemons around and on top of the chicken in the slow cooker.
- Set the slow cooker to low and let the chicken cook for 7-8 hours, or until it is tender and cooked through.
- Serve the lemon garlic chicken hot from the slow cooker, drizzled with some of the broth and garnished with a lemon slice.
Note: This recipe requires only 30 minutes of active preparation time. The slow cooker will do the rest of the work for you.
