Ingredients:

  • 4 boneless skinless chicken breasts
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 lemons
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth

Instructions:

  1. In a small bowl, combine the minced garlic, dried oregano, salt, and pepper.
  2. Rub each chicken breast evenly with the garlic and oregano mixture.
  3. Heat the olive oil in a skillet over medium-high heat. Once hot, add the chicken breasts. Sear for about 2-3 minutes on each side, until golden brown.
  4. While the chicken is searing, squeeze the juice from one lemon into the slow cooker.
  5. Slice the second lemon and set the slices aside.
  6. Once the chicken is seared, put it into the slow cooker.
  7. Pour the chicken broth around, but not directly on, the chicken. This will help keep it moist without washing away the rub.
  8. Arrange the sliced lemons around and on top of the chicken in the slow cooker.
  9. Set the slow cooker to low and let the chicken cook for 7-8 hours, or until it is tender and cooked through.
  10. Serve the lemon garlic chicken hot from the slow cooker, drizzled with some of the broth and garnished with a lemon slice.

Note: This recipe requires only 30 minutes of active preparation time. The slow cooker will do the rest of the work for you.
