Instructions:

  1. Begin by washing your yams and carrots thoroughly under cold water.
  2. Cut the yams and carrots into roughly 1-inch cubes. If you prefer, you can leave the peels on for additional texture and fiber.
  3. Place a large pot of water on the stove top and bring to a boil. Once the water is boiling, carefully add the cubed yams and carrots. Boil for about 10 to 15 minutes, or until they're just starting to soften.
  4. While you're waiting for your vegetables to cook, move on to preparing your chicken. Rinse off the chicken breasts under cold water, pat them dry with a paper towel, then season both sides with salt, pepper, garlic powder, and paprika.
