Ingredients:

  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1/3 cup granulated sugar
  • 1/2 cup high-quality cocoa powder
  • 2 large egg yolks
  • 1/2 teaspoon pure vanilla extract
  • A pinch of salt
  • Optional: 2 tablespoons of mini chocolate chips or chocolate shavings for garnish

Instructions:

  1. Prepare the Base:

    • In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat, stirring occasionally, until the sugar is dissolved and the mixture is warm but not boiling.
  2. Incorporate Cocoa:

    • Whisk in the cocoa powder until fully dissolved and the mixture is smooth. Remove from heat.
  3. Temper the Eggs:

    • In a separate bowl, whisk the egg yolks. Gradually add a small amount of the warm cream mixture to the yolks while whisking continuously, to temper the eggs and prevent them from cooking.
  4. Combine and Thicken:

    • Return the tempered egg mixture to the saucepan. Cook over medium-low heat, stirring constantly, until the mixture thickens slightly and coats the back of a spoon, about 5-7 minutes. Do not let it boil.
  5. Add Vanilla and Salt:

    • Remove from heat and stir in the vanilla extract and a pinch of salt.
  6. Chill the Mixture:

    • Pour the mixture into a bowl and cover the surface with plastic wrap to prevent a skin from forming. Chill in the refrigerator for at least 30 minutes, until completely cold.
  7. Churn the Ice Cream:

    • Once chilled, transfer the mixture to an ice cream maker and churn according to the manufacturer's instructions, usually about 20 minutes, until it reaches a soft-serve consistency.
  8. Freeze and Serve:

    • Transfer the churned ice cream to an airtight container. Freeze for at least 30 minutes to an hour, until firm. Serve scooped into bowls, optionally garnished with mini chocolate chips or chocolate shavings.

Notes:

  • For a richer flavor, use dark cocoa powder.
  • Ensure the ice cream maker bowl is completely frozen before churning for the best results.
